Leftovers = Amazing Burritos

Back again with another delicious meal! This particular dish was concocted a while ago, but...just looking at this picture makes me hungry for it again!

Some back story on this...our apartment decided to throw a huge barbecue to welcome everyone back for another wonderful year of college! What we didn't know is that BBQs are a lot of work. A LOT OF WORK. Stressful at first, but the outcome was awesome and fun. So much food and laughter and catching up with the bestest people! It was a potluck BBQ because obviously, we're college kids and we're not made of money so our guests brought their own dishes to share. 

Unfortunately (or fortunately I should say), I bought tooooooo much meat and so we grilled everything and gave some away and had a lot of leftovers. So what do you do with leftovers? Throw 'em in a tortilla and chomp away! 

How We Did It: 
We got some Mexican casserole leftover from our dear friend who lives upstairs (shout-out to Aletha!), chopped up the leftover meat, cooked some rice with salsa, and stuffed it into a burrito with some shredded cheese.

Delicious couldn't get any easier.

Juicy, Tender and Medium Rare- What More Could You Wish for in a Steak?

This steak was actually the first steak I've ever grilled! It looks pretty good, doesn't it? And it even tasted as good as it looks - on second thought, possibly even better. It was so tender and juicy and flavorful that I didn't even need to touch that A1 sauce (and for those who know me, that's impressive)!

Lards and I actually didn't make this dish together- I grilled it with my boyfren for a romantic dinner date out by the pool but I'm totally down to remake this dish with Lards since it was such a success :) But to be honest, my boyfren and I had no idea how to season a steak properly so we improvised. We pounded the steak (because that's what the experts always do on the Food Network) and haphazardly salted, peppered, garlic-salted, cayenne-peppered our steaks to our hearts content and let it sit for about an hour. Then we grilled it for about 8 minutes total and the steak was miraculously cooked medium rare- just the way we like it!

I wish I wrote down how much of each ingredient I used but honestly, I had no idea what I was doing! But here's a general list of ingredients I used- just use common sense to figure out amounts:
Salt
Pepper
Garlic Salt
Cayenne Pepper (not too much!!)
McCormick's Steak Seasoning
Love (the more the better)

Make Yourself a Sandwich Yo! (with YUMMY Basil Mayo)

So sorry for the lack of updates recently! Me and Shells have both been busy with midterms. Ugh, college life, but now we're back!!

This was actually made quite a while ago. Simple, delicious, and incredibly easy. A touch of basil mayonnaise will add a kick to any sandwich!

Basil Mayo Recipe

Ingredients:
1 cup of mayonnaise
1 cup of roughly chopped fresh basil
2 cloves of minced garlic (I did more because I like garlic, but it's up to you)
1/4 teaspoon of cayenne red pepper
salt and pepper

Directions:
1. Put the basil, garlic, and cayenne red pepper into a food processor and pulse. (I just wing it with this because no matter how much I pulse it, it's never smooth so I settle for slightly less chunky)
2. Add mayo to the food processor and blend together until well incorporated. (Don't forget to scrape down the sides once in a while!)
