Two and a Half Hour Transformation: Chicken Carcass to Meal

Lards and I went to Costco with our roommates to stock up on food and other essentials (i.e. toilet paper). Along with the many unnecessary items in our shopping cart, Lards and I ended up buying a delicious rotisserie chicken. And for the next few days, we ate EVERYTHING with rotisserie chicken- sandwiches, paninis, wraps, and salads. Finally, we officially ran out of tender, juicy rotisserie chicken meat. But instead of throwing out the chicken carcass, one of us (ME!) had a stroke of genius and decided to make chicken soup with the remains!

So Lards and I did a quick search for chicken soup recipes and gathered our ingredients: a few stalks of celery (stolen from roommate), two tiny packets of baby carrots (also stolen from roommate), a large onion (probably our roommate's), and other seasoning essentials.

After two and a half hours of simmering away, our apartment was filled with the sweet aroma of homemade chicken soup and Lards and I were chowing down on good old-fashion comfort food- and it was delicious.

You may have noticed that a few of our ingredients were stolen from our roommate... so I feel that it is appropriate to say thanks for allowing us to mooch!! :) You're the best, Suraj!
