Stuffed Pork Chops...Always Worth The Wait!

Bacon makes everything better.
Warning: very photo heavy!!!

Fresh parsley and smoked gouda
Ready for grilling!

On the grill...

Ready to eat!

YAY! First post with my DSLR photos. Now you can see all our delicious creations in HD.

First of all, so sorry for the lack of posts. Winter break happened and therefore laziness happened, but now we're back and hopefully will have a plethora of posts for you to enjoy! :)

Shelley and I made this amazing meal a while back, but looking back at these photos has me drooling! Pork chops stuffed with bacon and smoked gouda. As I've said before, bacon makes everything better! We followed this recipe step by step and it turned out great! This was pretty heavy and extremely filling. Adding a side of spinach salad with a light vinaigrette rounded out our meal.

I hope everyone had a wonderful Christmas and a great New Year! Look forward to more scrumptious treats from us in 2012!

Steak, BBQ Chicken Skewers, and Bacon-Wrapped Asparagus Skewers?! I think I'm in Heaven!!

filet mignon (right), bacon-wrapped asparagus skewers (left) and bbq chicken skewers (far left)

Steak is always good- ALWAYS. Hence, I couldn't resist celebrating the end of finals and the beginning of our marvelous winter break (YAY) with some good old steak- Filet Mignon to be exact (yeah, I'm fancy). Accompanying these fine pieces of steak are BBQ chicken skewers and bacon-wrapped asparagus skewers- wait, BACON-WRAPPED ASPARAGUS?! Am I out of my mind? No, no I'm not. In fact, these bacon-wrapped asparagus skewers have become my latest obsession ever since I I found my inspiration at Disneyland's small BBQ eatery directly across from the Indiana Jones ride (aka best ride ever!). So if you're willing to give these a try, here is the basic recipe:

1. Soak skewer sticks in cold water
2. Pan fry some bacon so that they are just slightly cooked but not crispy (don't worry- they'll get crispy on the grill!!)
3. Cut pieces of bacon in half (this depends on your preferred bacon to asparagus ratio)
4. Cut asparagus into pieces roughly 1.5 inches in length and place in a bowl
5. Drizzle olive oil over asparagus, add salt and pepper to taste and toss well
6. Wrap a 4-6 pieces of asparagus in a piece of bacon and strategically skewer the bacon to hold the bundle of deliciousness in place.
7. Place skewers on a hot grill for about 10 minutes, turning halfway, or until the asparagus starts to sizzle and the bacon starts to shrink and get crispy.
8. Lastly, try basting the skewers in BBQ sauce after they are done grilling for an extra oomph! Trust me- it's delicious!!

Typing up instructions on how to make these skewers makes my mouth water! Guess what I'm having for lunch tomorrow! :) I wish I got a better picture of the bacon-wrapped asparagus skewers but I was too excited to devour my fillet mignon and delicious skewers that it slipped my mind. However, I managed to snap this picture before I stuffed my face like a starving dinosaur:

So if you or a loved one is craving bacon, I strongly suggest that you give this recipe a try- its the BOMBdotCOM :) Oh, and if anyone is wondering, the Filet Mignon was grilled medium rare to perfection thanks to this cool webpage that I found for grilling tips and recipes.

Make Yourself a Sandwich Yo! (with YUMMY Basil Mayo)

turkey, bacon, spinach with basil mayo
So sorry for the lack of updates recently! Me and Shells have both been busy with midterms. Ugh, college life, but now we're back!!

This was actually made quite a while ago. Simple, delicious, and incredibly easy. A touch of basil mayonnaise will add a kick to any sandwich!

Basil Mayo Recipe

Ingredients:
1 cup of mayonnaise
1 cup of roughly chopped fresh basil
2 cloves of minced garlic (I did more because I like garlic, but it's up to you)
1/4 teaspoon of cayenne red pepper
salt and pepper

Directions:
1. Put the basil, garlic, and cayenne red pepper into a food processor and pulse. (I just wing it with this because no matter how much I pulse it, it's never smooth so I settle for slightly less chunky)
2. Add mayo to the food processor and blend together until well incorporated. (Don't forget to scrape down the sides once in a while!)

And that's all folks! Easy right?! Hope you enjoy!

The Beginning of the End...of our Skinniness

bacon wrapped chicken over rice
Guess what guys!  This was the first dish that Shelley and I made together and it basically led to the creation of BOMBdotCOM!  So Shelley wanted to make a rice casserole, which is a fairly easy dinner dish to make so we decided to 1-up this dish by making bacon-wrapped chicken on top of it. Honestly though, bacon makes everything better. In fact, bacon makes the world go 'round!

This dish wasn't completely unhealthy though! See the broccoli in the dish?! Mmmmm healthy.

So you may have noticed that there's a missing part of our casserole....well that was all Shelley's fault...okay okay actually it was my fault. I just couldn't resist! But can you blame me?!

Hope you'll continue joining us on our delicious food adventures!
